If the the sleeping co-ordinates are set you can make most mobs lie down if the Summon and Sleeping co-ordinates are set to the location of the pillow end of a bed. The mobs don't stay sleeping and often wake up shortly after summoning. The mechanic that makes this possible is undocumented and can be unreliable.
