[Infra + Logs UI] Add source configuration ui to the docs (#33535)
This adds the new source configuration ui to the documentation of both the Infrastructure UI and the Logs UI. It also removes the `BETA` badge to reflect the status change.

fixes elastic/kibana#31124

You can stream data for live log tailing, or pause streaming to focus on historical log data.
When you are streaming logs, the most recent log appears at the bottom on the console.
Historical data offers infinite scrolling.
